Au Gratin Potatoes

8 c Cubed peeled potatoes
1/4 c Butter or margarine
2 tb All-purpose flour
3/4 ts Salt
1/8 ts Pepper
1 1/2 c Milk
1 lb Process American cheese -- Cubed
Minced fresh parsley

In a large saucepan, cook potatoes in boiling water until done. Drain and place in a greased 2-1/2 quart baking dish. In a saucepan, melt butter. Add the flour, salt and pepper; stir to form a smooth paste. Gradually add milk, stirring constantly. Bring to a boil; boil and stir for 1 minute. Add cheese; stir just until cheese is melted. Pour over potatoes. Cover and bake a 350 for 45 to 50 minutes or until bubbly. Sprinkle with parsley. Yield: 12 servings.
