Cheese And Bacon Quiche

10 sl Bacon; crumbled
1 Tart pastry; baked
4 Eggs
2 c Light cream
1/2 ts Salt
1/8 ts Nutmeg
pn Cayenne
1 1/4 c Swiss cheese; grated


Preheat oven to 425 degrees.

Sprinkle the crumbled bacon over the bottom of the tart shell. Combine the eggs, cream, salt, nutmeg, and cayenne in a bowl and beat to mix thoroughly. Sprinkle the cheese over the bacon, then ladle the custard over all.

Bake for 15 minutes at 425 degrees, then lower the heat to 350 degrees and bake for 30 minutes longer, until a knife inserted in the center comes out clean.

Serve hot or cold.
