Layered Eggs

12 slices white bread
3/4 lb. Monterey Jack cheese
1 (10 oz.) pkg. frozen spinach, cooked and drained
2 c. diced ham
1 sm. can mushrooms
6 slightly beaten eggs
3 1/2 c. milk
2 tbsp. instant onion
1/2 tsp. salt
1/2 tsp. dry mustard
4 oz. shredded sharp Cheddar cheese


Trim the crust from the bread (save). Toast the bread. With a cookie cutter, cut circles (save). Line a 9 x 13 inch pan with the bread scraps. Layer the Monterey Jack, cooked spinach, ham, mushrooms, and the toast circles. Mix eggs, milk, onion, salt and dry mustard. Pour over the circles to soak them. Sprinkle with Cheddar cheese. Cover. Let stand overnight. Bake at 325 degrees for 55 minutes. Serves 12.
