Lenten Lasagna

1 (10 oz.) package lasagna or wide noodles
1/2 cup chopped onion
1/4 cup cooking oil
1 cup tomato puree
1/2 cup water
1/2 tsp. thyme
1/2 tsp. salt
1/4 tsp. pepper
2 cups Shrimp or Lobster Meat
1 lb. Mozzarella cheese
1/2 cup grated Parmesan

Cook noodles in rapidly boiling water (salted) until tender and drain. Saute onion in oil until tender. Stir in tomato puree, water and seasonings, simmer about 1 hour. Then place on bottom of a large shallow baking dish, one layer of noodles, top with a layer of either Shrimp or Lobster Meat. Cover it with sauce. Place layers of Mozzarella cheese and a sprinkling of Parmesan. Repeat layers to fill dish. Bake in moderate oven, 350 F, until bubbling hot, about 30 to 35 minutes.
