Roquefort Appetizers

5 ounces Roquefort cheese
3 ounces butter -- softened
2 cloves garlic -- minced
1 teaspoon cognac
freshly ground black pepper

Prepare just before serving; it may break down and become watery if prepared too far ahead.

Mix the cheese with the butter.

Mince garlic finely and add with cognac to mixture.

Add pepper to taste.

Serve on fresh bread with red wine.
