Hot Cheese Balls

1/2 lb. Gruyere cheese
2 tbsp. flour
4 egg whites
Fresh bread crumbs
Salt and pepper
Parmesan cheese
Grated onion (1/2 to 1 tsp.)

Stiffly beat egg whites, mix with flour, cheese and onion. Add 1/2 teaspoon chives if you wish. Gently form into small balls; roll in bread crumbs seasoned with salt and pepper. Fry in deep fat (350 degrees). Electric fry pan is good. Drain, arrange in pyramid on platter and sprinkle with Parmesan cheese. These may be made larger and served as a first course with hot tomato sauce. (Serves 6-8.)
