Lasagna Pinrolls

10 oz. lasagna noodles, cooked & drained
3 c. ricotta cheese
1/2 c. grated Parmesan
2 tbsp. parsley flakes
1 tbsp. garlic powder
1/2 tbsp. oregano
2 eggs
2 tsp. salt
1/2 tsp. pepper
1 lb. mozzarella, grated
2 jars favorite spaghetti sauce


Combine ricotta, Parmesan, parsley, garlic, oregano, eggs, salt, pepper and 1/2 of the grated mozzarella. Mix well. Grease a 13 x 9 inch baking pan. Lay a noodle on the counter and spread a thick layer (1/2 inch) of cheese mix down the middle of the noodle. Roll the noodle up and stand the roll up on its curly edge. Spoon sauce around the noodles/roll ups and top roll ups with remaining grated cheese. Serve with any remaining sauce, heated on the side. Bake at 350 degrees for 45 minutes.
