Hachis Parmentier

5 lbs. potatoes
2 eggs
1/2 lb. Swiss cheese, grated
1 bar butter
1 med. onion, chopped
2 lbs. ground round beef
9x12x2 inch rectangular dish


Boil the potatoes with a pinch of salt. When done, mash them with 2 eggs, bar of butter and the grated cheese. Add salt and pepper for taste. Meanwhile, put the meat in a pan and detach the pieces. When done, drain extra fat and saute 3 to 5 minutes with chopped onions. In a lightly buttered dish, put half of the potatoes, add a layer with the meat and finish with the layer of the rest of the potatoes. Sprinkle some grated cheese on top. Put in a 350 degree oven for about 20 minutes.
