Cinnamon Rolls

1 pkg. yeast
1/4 c. warm water
1 tsp. sugar
Dash of ginger
1 c. cottage cheese
1 tbsp. margarine
1/2 tsp. salt
1/4 tsp. baking soda
1 egg
2 tbsp. sugar
2 1/4 to 2 1/2 c. flour


Dissolve yeast, 1 teaspoon sugar and ginger into 1/4 cup warm water. Combine with cottage cheese, margarine, salt, soda, egg and 2 tablespoons sugar. Combine flour with mixture. Mix and heat well after each addition, then knead. Cover and let rise until doubled in bulk and light. Stir dough, let rest about twenty minutes, shape. Bake at 350 degrees for 30 to 40 minutes.
