Cheese Omelet

8 slices bacon, fried and crumbled
4 green onions, sliced
8 eggs
3/4 c. milk
1/2 tsp. salt
2 1/2 c. shredded cheese (preferably Monterey Jack)

Saute onion in bacon drippings. Beat eggs with milk and salt. Stir in bacon and onions and chese (reserve some for top). Pour into a greased shallow baking dish. Bake uncovered at 350 for 45 minutes or until set. Sprinkle with remaining cheese. Return to oven until cheese melts.
