Cheese Blintzes

1 c. ricotta cheese or 3 oz. cream cheese
2/3 c. cottage cheese
1/4 c. sugar or 3 packets of sugar substitute
1 tsp. vanilla extract
1/2 tsp. grated lemon peel
1/4 tsp. salt
Melted butter or margarine

Mix cheese, sugar, vanilla, lemon peel and salt together. Fill each crepe with about 1 tablespoon of filling. Roll and place in slightly buttered baking pan. Bake in moderate 325 degree oven for 20-25 minutes. Serve with a fruit preserve (blueberry, strawberry, peach, etc.)
