Brunch Puff

8-12 slices bacon
2 onions, sliced
12 slices white bread, quartered
1/2 lb. Swiss cheese, shredded
8 eggs
4 c. milk
1 1/2 tsp. salt
1 1/2 tsp. pepper


Cook bacon until crisp, remove from pan. Cook onion in bacon drippings until soft. Spread 1/2 bread in bottom of greased pan (9 x 13 inch). Sprinkle with 1/2 bacon (crumbled), onions and cheese. Repeat layers. Combine eggs, milk, salt and pepper; pour egg mixture over top layer in pan. The casserole can be prepared to this stage in advance in stored in refrigerator until 1 hour before serving time. Bake in 350 degree oven for 45-50 minutes until set and puffed. *Can freeze when baked.
