Brunch Puff

8 slices bacon
2 onions, sliced
12 slices white bread, quartered
1/2 lb. Swiss cheese, shredded
8 eggs
4 c. milk
1 1/2 tsp. salt
1/4 tsp. pepper


Cook bacon until crisp; remove from pan. Cook onion in bacon drippings until soft. Spread half of the bread in the bottom of a greased 9"x13" pan. Sprinkle with half the bacon, crumbled, onions, and cheese. Repeat layers. Combine eggs, milk, salt and pepper; pour egg mixture over top layer in pan. The casserole can be prepared to this stage in advance and stored in the refrigerator until 1 hour before serving time. Bake in moderate oven, 350 degrees for 45 to 50 minutes, until set and puffed. Makes 8 servings. For 4 servings, reduce all amounts by half, bake in an 8" square pan.
