Brie Spaghetti

4 ripe lg. tomatoes, cut into chunks
1 lb. Brie cheese with rind removed, torn into pieces
1 c. basil, cut into strips
3 cloves garlic, finely minced
1 c. good olive oil (Extra Virgin)
1/2 tsp. salt
1/2 tsp. pepper
Parmesan cheese to taste


Marinate all ingredients except Parmesan cheese together for at least 2 hours at room temperature. Cook linguini in 2 teaspoons of salt and 1 tablespoon olive oil until al dente. Pour Brie mixture over hot linguini and mix well. Add Parmesan cheese.
