Breakfast Tacos

1 doz. eggs & 1/4 c. water
1 lb. sausage
2/3 c. Pace Picante sauce
1/4 lb. grated Monterey Jack cheese
12 flour tortillas


Grind up sausage and fry until done. Drain and set aside. In a large bowl, beat eggs. Mix in picante sauce and water while beating eggs. Scramble egg mixture in large skillet. Stir in sausage and grated cheese. Warm tortillas in oven or microwave. Place approximately 3 tablespoons of eggs in tortillas and roll up. Makes 12 breakfast tacos. Unused eggs and tortillas can be stored in refrigerator or prepared and frozen for future use. Microwave refrigerated tacos for 35-45 seconds. Frozen tacos for 1 1/2-2 minutes.
