Breakfast Quiche

1 lb. sausage
8 eggs
1/2 c. milk
1/4 tsp. salt
1/8 tsp. pepper
1 c. shredded Cheddar cheese
1 c. shredded Swiss cheese


Crumble sausage into 8 inch glass dish or microwave safe quiche dish. Microwave, covered, on high 5 to 6 minutes or until meat is no longer pink. Drain. Spread evenly in dish. Set aside. In a one quart bowl, beat eggs, milk, salt, eggs are set, but still very moist, stirring every 2 minutes. Stir in cheeses, pour mixture over sausage. Cover with wax paper. Microwave on medium, 6 to 8 minutes or until center is set. Allow to stand, 6 to 8 minutes, or until center is set. Allow to stand, covered, 5 minutes before serving.
