Breakfast Pita

1/2 c. chopped onion
1/2 c. diced green pepper
2 tbsp. butter or margarine
1/2 c. diced cooked ham
4 eggs, well beaten
1/4 tsp. salt
1/8 tsp. pepper
2 pita bread, cut in half
1 c. shredded Monterey Jack cheese


In skillet over medium gas flame, saute onion and green pepper in butter until tender; add ham and saute 1 minute longer. Combine eggs, salt and pepper; pour into skillet and cook until eggs are set but still moist. Spoon into pita halves, topping with 1/4 cup cheese. Makes 4 sandwiches.
