Baked Omelet

8 slices bacon
8 eggs
1 c. milk
1/2 tsp. salt
2 1/2 c. (10 oz.) shredded Monterey Jack cheese
1 c. bread cubes

Chop and fry bacon. Drain off excess fat. Beat eggs, add milk and beat well. Add salt, bacon and 2 cups cheese and bread cubes. Pour into greased 9x13 inch pan. Bake uncovered 30-40 minutes at 350 degrees. Ten minutes before done, sprinkle on remaining cheese. Serves 8.
