Anginetti Cream Puffs

1 pkg. Stella Doro Anginetti cookies, cut in half
1 sm. pkg. cream cheese
1 sm. can crushed pineapple (drain-leave a little juice)
1 container Cool Whip
1/2 tsp. vanilla


Mix whipped topping and cream cheese in a bowl for one minute at medium speed. Add pineapple and vanilla. Blend all the ingredients for about one minute at low speed. Drop filling from tablespoon onto bottom layer of cookies; replace tops. Refrigerate puffs until ready to serve. Filling should be enough to fill a package of cookies.
