Gemelli with Ricotta and Spinach

16 oz Gemelli
1 tb Olive oil
2 Cloves garlic; crushed
20 oz Chopped spinach
1 Carton; (15 oz) skim ricotta cheese
1/3 c Grated Parmesan cheese
1/4 tb Coarse ground pepper

Prepare pasta in boiling salted water. Meanwhile,heat oil in a skillet over medium heat until hot. Add garlic ,stirring for 1 minute. Gradually add spinach and 2 tablespoons of water;cook,stiring often,just until spinach wilts. Remove skillet from heat. When pasta is done, remove 1 cup of pasta cooking liquid, drain pasta ,return to pot. Add ricotta cheese, parmesan cheese, pepper,1/2 tsp salt,spinach mixture and reserved cooking water. Toss until well blended. Garnish with fresh grated Parmesan cheese
