Cheese Fondue

3 c Shredded Swiss cheese; (12 ounces)
1 tb All-purpose flour
1/8 ts Ground nutmeg
3/4 c Rose wine


In a medium bowl, combine the cheese, flour, and nutmeg, tossing to coat the cheese completely. In a medium saucepan, heat the wine over medium heat until bubbly. Add 1/4 cup of the cheese mixture to the wine, stirring constantly. Continue to add the cheese mixture by 1/4-cupfuls for 3 to 5 minutes, or until the cheese has melted and the mixture is thoroughly blended, stirring constantly. Serve immediately.

NOTE: Whether you serve this right out of the saucepan or transfer it to a fondue pot or a chafing dish, stir constantly and keep it warm so it won't solidify. Serve with bite-sized chunks of French bread, apples, and/or pears.
