Steak Diablo

2 tb Olive oil
1 md Yellow onion, diced fine
1/2 c Fresh garlic, chopped fine
2 c Green chile peppers, roasted peeled, seeded, chopped
2 ts Dried oregano (Mexican Preferred)
Salt to taste
12 sl Provolone, cut in half


enough for eight 6 oz steaks (New York, etc).

Heat olive oil over medium heat, add garlic and onion. Saute until onion turns transparant, 5-6 min. Add green chile, oregano and salt, cook another 5 minutes and remove from heat.

Grill steaks until 2/3 done (maybe 3-4 min/side). Place steaks in preheated broiler, top with green chile sauce and provolone.. Broil 1-2 min until cheese is melted and steaks are done.
