Savory Cheese and Olive Spread

1 c Jarlsberg or hickory-smoked Jarlsberg cheese; finely shredded
1/2 c Ripe olives; finely chopped
1/4 c Green onions; finely chopped
2 tb Chutney; finely chopped
1 tb Mayonnaise
2 ts Dijon-style mustard


In a bowl combine all six ingredients and mix well. Cover and chill 1 to 24 hours. Use as a spread on crackers or small toasts or to stuff scooped-out cherry tomatoes, celery slices, endive or spread on cucumber and zucchini slices, eggplant and carrot rounds.

Makes about 1 1/4 to 1 1/2 cups of spread.
