Bougatsa

Filo pastry
500 g Ricotta cheese; (low fat)
2 tb Cream
2 tb Plain flour
Cinnamon
Lemon rind; (optional)
1/2 c Sugar


Combine all ingredients with a fork or blender. Butter or oil your filo pastry sheet, both sides.

Repeat this method with every sheet.

You require 2 sheets per parcel. Fill with cheese mixture and fold pastry into parcel.

Heat the oven to 190c - 200c and cook the parcels for ten minutes. Then lower heat and cook until you get a nice golden colour.

Sprinkle with sugar and cinnamon.

Serve warm.
