Marinated Goat's Cheese

2 150 g. goats cheese; (South Cape brand is ideal)
Extra virgin olive oil


Selection of flavorings : peeled garlic; arbequina olives, cloves, bay leaves, rosemary sprigs, thyme sprigs, small whole or sliced chillies, whole black peppercorns

Cut each cheese into about 6 slices. Place in a glass jar and sprinkle with a selection of flavorings - only use one herb. Completely cover with oil and seal securely. Leave for a few days before using.
